Given optimal nutritional and environmental conditions, potato starch undergoes significant particle size transformations, outperforming oat, purple potato, and wheat starch.

The viscosity of our potato starch is determined by amylose polymerization. With more than 79% amylopectin content, it boasts an average peak viscosity of 2988 BU, surpassing corn starch (589 BU), oat starch (999 BU), and wheat starch (298 BU).

The starch exhibits a low gelatinization temperature.

Potato starch boasts an average gelatinization temperature of 64ºC, which is lower than corn starch (72ºC), wheat starch (73ºC), cassava starch (65ºC), and sweet potato starch (80ºC). Despite large particle sizes, its molecular structure, featuring exclusive phosphate groups, allows for an impressive expansion effect.
