Oval-shaped particles represent larger-sized starch, while round ones are smaller. Environmental factors and nutrition can influence the particle size, resulting in larger sizes compared to starches from oats, purple potatoes, and wheat.

The viscosity of potato starch is influenced by the polymerization of its amylose. With a remarkable potato amylopectin content exceeding 79% and an average peak viscosity of 2988 BU, it surpasses the viscosities of corn (589BU), oat (999BU), and wheat starches (298BU).

Low gelatinization temperature for culinary ease

The average gelatinization temperature of potato starch is a low 64ºC, significantly lower than corn (72ºC), wheat (73ºC), cassava (65ºC), and sweet potato starches (80ºC). Despite the large size of potato starch particles, the presence of mutually exclusive phosphate groups weakens the internal structure, enabling excellent expansion.

Under optimal conditions, potato starch granules in paste resist puffing and gelatinization. The transparency of the paste is attributed to its condensed phosphate groups and absence of fatty acids.
