With oval particles indicating larger sizes and round faces denoting smaller ones, it is naturally larger than oat, purple potato, and wheat starch, adapting and enlarging under specific nutritional and environmental conditions.

Potato starch's impressive viscosity is attributed to its amylose polymerization. With more than 79% amylopectin composition, it achieves an average peak viscosity of 2988 BU, surpassing corn starch (589 BU), oat starch (999 BU), and wheat starch (298 BU).

The gelatinization temperature is low

With an average gelatinization temperature of just 64ºC, potato starch surpasses corn (72ºC), wheat (73ºC), cassava (65ºC), and sweet potato starch (80ºC). Despite its substantial particle size, the molecular structure's weak internal framework and opposing phosphate groups facilitate exceptional expansion.

High transparency of starch syrup

Under optimal conditions, potato paste starch granules remain unaffected by gelatinization, thanks to the condensed phosphate groups and absence of fatty acids within their molecular structure. Phosphorus plays a crucial role, existing as covalent bonds within the starch, and interacting with organic ions like manganese, calcium, and iron. These elements are pivotal in the reaction steps, lending the starch a negative charge that enhances adhesion to water, leading to a swift expansion and the creation of cohesive starch paste.
