In various regions, including Europe and the United States, a process known as 'dutching,' pioneered by the renowned Dutch chocolatier, Conrad van Houten, is employed. This involves treating cocoa beans with an alkaline substance such as potassium carbonate before or after roasting, increasing the pH to between 7 and 8. The process mitigates astringent and bitter phenolics, while enhancing roasted, caramel-like notes, resulting in a cocoa powder that epitomizes sophisticated taste.
