Acesulfame Potassium Acesulfame Potassium is a celebrated sweetener in the food processing world since its debut in 1967. Known affectionately as Acesulfame K or Ace K, this sugar substitute is totally calorie-free and delivers a sweetness 200 times that of sucrose, making it as sweet as aspartame. Much like saccharin, it has a mildly bitter finish, especially noticeable at elevated concentrations. When blended, typically with sucralose or aspartame, Acesulfame K creates a taste profile reminiscent of sucrose, where the aftertaste of each component is cleverly masked or the combination results in a more intense sweetness than the individual sweeteners.
