Sodium Metabisulfite: A Versatile Ingredient for Your Needs Sodium Metabisulfite presents itself as a white or yellow crystalline powder or small crystal, exuding a potent SO2 aroma. With a specific gravity of 1.4, it easily dissolves in water, creating an acidic aqueous solution. Upon encountering a strong acid, it liberates SO2 to form a corresponding salt. Notably, exposure to air leads to oxidation, and at temperatures above 150 degrees Celsius, it decomposes into SO2. Due to its composition, Na2S2O5, this product is not ideal for long-term storage.
