Yeast Extract is a versatile powder or granular substance crafted from protein-rich yeast, including baker's yeast, where the cellular contents are artfully degraded.
This process is achieved through autolysis, enzymatic hydrolysis, or acid hydrolysis. The extract's composition boasts free amino acids, small molecular peptides, B vitamins, nucleotides, minerals, and essential growth factors, making it a pivotal organic nitrogen source and a vital nutritional supplement in microbial culture media. Depending on the processing technology, it is categorized into the following types:
Autolysis type: Characterized by a low degree of hydrolysis and cost-effectiveness, this type is predominantly employed in industrial fermentation.
Enzymolysis type: By employing complex enzymes such as protease and glucanase, this type undergoes moderate hydrolysis, resulting in a rich profile of nucleotides and vitamins, ideal for laboratory use and high-demand microbial cultures.
Acid hydrolysis type: Known for its high content of free amino acids, it also contains more salt and Maillard reaction products, making it particularly favored in the food industry for seasoning purposes.
