Sodium Metabisulfite Sodium Metabisulfite is an impressive white or yellow crystalline powder or small crystals, recognized by its strong SO2 odor. With a specific gravity of 1.4, it is water-soluble, and forms an acidic aqueous solution. Upon contact with strong acids, it releases SO2, resulting in a corresponding salt. It must be noted that when exposed to air, it oxidizes due to its chemical structure, Na2S2O5, making it unsuitable for long-term storage. At temperatures exceeding 150 degrees Celsius, this compound decomposes to release SO2.
