When subjected to specific nutritional and environmental conditions, the particle size of potato starch can increase, surpassing that of oat, purple potato, and wheat starches.

The viscosity of potato starch is dictated by the polymerization of its amylose content. Compared to corn, oat, and wheat starches, potato starch boasts an impressive amylopectin content of over 79%, with an average peak viscosity of 2988 BU—far exceeding corn (589 BU), oat (999 BU), and wheat starch (298 BU).

The gelatinization temperature is low

Potato starch has an average gelatinization temperature of 64ºC, lower than corn (72ºC), wheat (73ºC), cassava (65ºC), and sweet potato starches (80ºC). Despite the larger particles, the weak internal structure and exclusive phosphate groups in its molecular design enable excellent expansion effects.

Under optimal conditions, potato starch granules retain their transparency, free from puffing and gelatinization issues, thanks to its condensed phosphate groups and absence of fatty acids in its molecular structure.
