Pectin is a natural heteropolysaccharide, mainly found in the cell walls of higher plants (such as citrus fruits, apples, etc.), composed of alpha-1, 4-glucoside linked galacturonic acid units, and may contain rhamnose-galactose and other neutral sugar side chains 112. Its unique gelling and stability make it widely used in food, medicine, cosmetics and scientific research fields. Pectin can be separated and purified from plant raw materials by acid extraction or enzymatic hydrolysis. It has the characteristics of high biocompatibility and good safety.

1.Gelling and thickening: It is combined with sugar to form a gel under acidic conditions, which is suitable for food processing such as jam and jelly to improve texture and taste 112.
